Easy & Quick Breakfast Ideas for Busy Mornings

We’ve all been there. You’ve already hit your snooze button twice, and now you’re calculating just how much time you need to get ready before bolting out the door for your morning commute. Once again, eating breakfast has been sacrificed in favor of sleep. You know it’s not the best way to start your day, but what can you do? There’s just not enough time in your morning for breakfast. While we all yearn for the weekend and long lazy brunches, it is possible to make the same yummy Sunday foods during your work week. Let’s take a look at how we can make simple breakfast recipes in the same amount of time it takes to get dressed in the morning.

Homemade French Toast

One great tactic to stay on top of your breakfast game is to make your breakfast the night before. There are lots of breakfast items that you can just store it in your freezer and give a quick reheat in the morning. If you have a sweet tooth in the AM, this French toast recipe can satisfy your cravings and give you fresh energy at the same time. You’ll need:

6 slices of bread (any kind will do, but we love challah)

½ cup of milk

3 large eggs

¾ teaspoon of vanilla

¾ teaspoon of ground cinnamon

½ a tablespoon butter for your skillet/pan

Wax paper and a heavy-duty freezer bag

First, whisk together the milk, eggs, vanilla, and cinnamon in a shallow bowl. After everything is mixed well, heat your skillet on medium high heat and melt the butter. When the skillet is hot, place the bread in the bowl mixture and make sure both sides are soaked evenly. Cook both sides of the bread until they are golden brown. After each slice of bread is cooked, add more butter to the skillet as needed. Let the toast cool for a bit before placing a sheet of wax paper between each slice, and then place in the heavy-duty freezer bag. In the morning, reheat in the toaster and add your favorite sides like fruit, butter, or maple syrup. If you’d like a little more protein, then you can spread on peanut or almond butter. And voila! You have a delicious breakfast in mere minutes.

Scrambled Egg Sandwich

This is a quick breakfast that you can take with you, which makes it a perfect grab and go meal. The total cook time and clean up time is less than 20 minutes. You’ll need:

Butter

2 eggs

2 slices of bread

Avocado

Spinach or mixed greens

Shredded parmesan cheese

Heat your skillet on medium to high. Coat your pan with butter, scramble two eggs and add to the pan. Or, if you are in a hurry, you can make your eggs over easy or medium. As the eggs are heating up, toast the bread. When the eggs are almost done, sprinkle a small handful of parmesan cheese over the eggs. Spread butter and avocado on the toast and then place the greens on top. When you put the eggs on top of the greens, it will heat up them up and release extra flavor in your sandwich. Wrap the sandwich in a napkin and you’re all set to go.

If you prefer a breakfast burrito you can always swap your bread for a warm tortilla, just heat it for 20-30 seconds in the microwave before adding your cheesy eggs, avocado, and greens.
